In recent years the North American food and beverage industry has seen a steady movement towards outsourcing and an increasing range of products and raw materials. Multiple sourcing has become a common feature and has been beneficial for the manufacturer/processor in most cases. The quality and safety of your products and the reputation of your company can depend upon your suppliers, contract manufacturers and co-packers. Given this reality, it is extremely important to be aware of the Supplier Quality Assurance (SQA) protocol, to meet the recognized requirements and to establish a reliable supplier base. At the end of the program, you will be able to:
Understand your risks and responsibilities when sourcing from suppliers
Understand important elements and principles of SQA
Allocate risk levels to ingredients by applying criteria for ranking risk
Discuss supplier selection strategies
Evaluate suppliers’ manufacturing process, including product performance, process capability and food safety and quality system review
Manage documentation for your SQA program, including certificate of analysis, supplier agreements and supplier matrix
Develop a SQA Program
A good understanding of food safety principles is essential.
