Required Prerequisites:

HACCP I: Prerequisite Programs

  • The HACCP system, comprised of the HACCP prerequisite programs, the HACCP plan and reassessment, is a preventative approach to food safety. Establishing control of identified hazards at critical control points during manufacture ensures safe production of food. The development of a HACCP plan requires a comprehensive review of the product line in order to complete a hazard analysis, determine critical control points, set critical and operating limits, and establish procedures for monitoring and deviation with accurate validation and verification processes and record keeping. At the end of the program, you will be able to:

    • Discuss food safety, food quality, global food safety standards and prerequisite programs as building blocks for HACCP
    • Apply the Codex 12 steps to HACCP to develop and maintain your HACCP plans
    • Differentiate between physical, chemical and biological hazards
    • Conduct a hazard analysis and utilize the HACCP decision tree to identify critical control points

    This program is recognized by the International HACCP Alliance.

    HACCP II is an examinable program. Register for HACCP II, with the optional online examination, and receive a Certificate of Attainment upon successful completion.

    Exam Details

    The HACCP online examination is a way to demonstrate knowledge and competency in HACCP plan development.

    • The exam is optional for participants of HACCP II.
    • The examination must be written within 18 months of having successfully completed HACCP Plan Development training.
    • The exam consists of 50 questions and examinees will get two hours to complete the exam. The passing grade is 70% or more.
    • Multiple choice exam questions will focus on GMPs, prerequisite programs and HACCP plan development.
    • Two attempts will be permitted to complete the examination.
    • Upon successful completion of the exam, a Certificate of Attainment will be awarded.

    Prerequisites

    HACCP I and HACCP II (or equivalent Prerequisite Programs and HACCP Plan Development training). A good working knowledge of GMPs and prerequisite programs is essential.

    Exam Access

    The HACCP online examination may be purchased while registering online for HACCP II: Developing Your HACCP Plan. If you have already completed the program and would like to register for the exam, the option to purchase the exam will be available on the NSF-GFTC website once you log in to 'My Homepage.'

    Note: For participants having successfully completed HACCP Plan development training in the past 18 months, the option to purchase the exam will be available on the NSF-GFTC website once you log in to 'My Homepage.'

Cancellation Policy:

Substitutions (in writing) are welcome anytime, but please notify us as soon as possible.

Early Cancellations (more than two weeks prior to the course date):
A refund will be issued for the registration fee paid, less a 25% processing charge.

Late cancellations (less than two weeks prior to the course date):
Refunds cannot be issued for late cancellations.

Program cancellation: GFTC reserves the right to cancel or postpone a program due to unforeseen circumstances. Should this occur, you will be notified as soon as possible. All efforts will be made to notify participants at minimum two weeks before the scheduled event. If GFTC cancels a course, your entire registration fee will be refunded.

Travel:In the event that you are travelling to attend a training program, please purchase travel insurance should the program be cancelled or postponed due to unforeseen circumstances.
